Cucumber Kimchi is a popular type of kimchi, but is definitely more difficult to find than typical Napa Cabbage Kimchi. If you like cucumbers or pickles, we highly recommend you try Cucumber Kimchi. 

This type of kimchi is more typically eaten as a side dish (like whenever you would eat a pickle) than incorporated into a dish.

How long does K-Mama Kimchi last?

Kimchi is very popular these days for its gut health benefits, due to its natural fermentation process. 

Keep Refrigerated. Since it is fermented, it can last several months in the fridge but tastes best in one month. Even after one month, the kimchi doesn't go bad, it just continues to ferment and change in flavor. But, the more it ferments, the better for your gut health!
